Birrificio Sottobisio was founded in 2013 in Balerna, in the heart of Swiss Italian Ticino, born from the vision of Jacopo Buraschi, an industrial biotechnologist with a deep fascination for the science behind fermentation. Where most brewers follow recipes, the brewery follows reactions: its approach is built on a precise understanding of mashing and fermentation chemistry, using custom built equipment specifically designed to give full control over every batch.


It brews unpasteurized, unfiltered craft beers organized across three lines. Baseliners are the core styles, always available. Specials are niche and seasonal creations. Collaborations are boundary pushing projects with fellow brewers that explore new styles and push the craft forward. From the barrel-aged Wild Shot series to the honey laced Bock al Miele and the low alcohol Freeride, every beer reflects both technical rigour and genuine curiosity.


Brewing in Ticino means drawing inspiration from a region where Swiss precision meets Mediterranean character. That contrast is in the brewery’s DNA and in every bottle.
