​BRASSERIE DE COUVALOUP 

Brasserie de Couvaloup Sàrl, located in Apples in the Hauts de Morges region, was founded in 2015. Its master brewer, Alexander Rockinger, who holds a doctorate in biology, brings to his scientific rigour and constant concern for cleanliness and hygiene, essential elements in the production of quality beers. His in-depth knowledge of biology and chemistry are major assets in guaranteeing optimal

brewing processes. While continuing to produce “classic-style” beers, the brewery is constantly innovating with original creations such as IPAs, beers in a variety of colours and beers flavoured with jasmine flowers. As for the "Éphémères", they punctuate the seasons with limited editions. All the beers are carefully crafted, using water from the springs in the village of Apples and carefully selected European ingredients, without compromising on quality.

Committed to sustainable production, the brewery uses 400 m² of solar panels installed on its roof to cover its energy needs. What's more, the cooling water is recovered and reused in other brewing processes. Finally, the spent grain is not thrown away, but recycled as a feed supplement for the cows in the neighbouring village.
